Sibeeria/Hope Umami Gose
Czech collaboration 🇨🇿 Gose is a wonderful playground for brewers, and this time it inspired us — together with the gypsy brewery Hope — to explore the world of umami. The idea began with a homebrewed pilot batch by Honza from Hope. After tasting it and discovering its surprising potential, we refined the recipe and scaled it up into a full brew. This beer is packed with umami-rich ingredients: miso paste, dried tomatoes, and wakame seaweed, creating remarkable depth and savoury complexity. A touch of coriander and a refreshing hint of Kampot pepper bring balance and lift to the beer’s rich character. Deep, full-flavoured, and unapologetically unconventional, this is a beer that blurs the line between drink and food. If there’s such a thing as too much umami, we certainly didn’t stop there.
